Pumpkin muffins

This idea came in my mind when I saw that pumpkin lying in my fridge and staring at me.. Please cook meπŸŽƒπŸŽƒ.. I do not wanted to make that old khatti meethi sabzi.. Browsed many recipes and finally found this one.. A very simple yet amazing recipe..

Ingredients

  1. Pumpkin puree
  2. White flour or maida 1 cup
  3. Sugar 2 cups
  4. Eggs 2
  5. Cream cheese
  6. Pumpkin spice
  7. Baking soda
  8. Baking powder
  9. Butter

Method

  1. Pre heat the oven and meanwhile spray cooking spray.
  2. In a bowl combine flour, sugar, baking soda, baking powder and pumpkin spice.
  3. In a separate bowl combine pumpkin, butter, eggs.
  4. Combine wet and dry mixture and stir properly.
  5. Fill the muffins tray.
  6. And using piping bag put some cream cheese in between.
  7. Cook till muffins turn golden.

Grilled chicken

Its one of my go to dishes.. Although I often make this but this time its with a twist.. I have added honey to give a sweet touch to the chicken

Ingredients

  1. Chicken 1 full
  2. Curd 50 grams
  3. Garlic 3 tbsp
  4. Chilly powder 1 tbsp
  5. Honey 2 tbsp
  6. Salt
  7. Chaat masala 1 tbsp

Method

  1. Marinade the chicken with above all ingredients for overnight. If you don’t have time you can do it for a 4 hours minimum.
  2. Now while putting it in baking tray add a little honey brush it on all pieces with some chaat masala.
  3. Grill it for 40 minutes. You will get good charred chicken ready.

Sweet potato pudding or Shakarkandi kheer

For me kheers are always fascinating. For my mom desserts were always as important as the main course. And it was a lengthy and time consuming process.. But surely the result was outstanding..

Ingredients

  1. 1 big sweet potato
  2. 1 litre whole milk
  3. 10-12 dates
  4. 1 tsp cardamom
  5. A bowl of taal makhane
  6. Dry fruits
  7. Kewra water
  8. Saffron

Method

  1. Boil the sweet potatoes and put them in cold milk. Mash nicely
  2. Now put the milk on stove and cook for some time.
  3. Add dates, makhane to it.
  4. Let it cool down and then grind it in mixer.. This will make it creamy.
  5. Again transfer it in the pan. Cook for some time and add dry fruits.
  6. Kewra water little n saffron.
  7. Serve cold…

Perkedel aka potato fritters

Have always a big fan of potatoes and so my kids.. Since the day I have stepped in kitchen, potatoes are always my favorite.. Earlier I use to find it easy making anything from them but now since my kids have also started loving it. I try making healthy and some interesting recipes..

This is an Indonesian snack.. Although i have never been there but the food always attracted me.. Perkedel Kentang is basically deep fried minced patties.. You can eat it as a snack or with your meal as well..

Ingredients :

  1. 3 large potatoes
  2. 2 tbsp garlic paste
  3. Spring onions
  4. White pepper
  5. 50 grams minced beef.. Cooked
  6. Salt
  7. Onion powder
  8. 1 egg beaten for frying

Method

  1. Take the potatoes and cut them into dice shape and defry them.
  2. When cooled mash them.
  3. Now add garlic, onions, salt, white pepper, onion powder to it.
  4. Mix nicely and add beef( you can omit it if you want)
  5. Make patties of the mixture.
  6. Dip in beaten egg and de fry it.

You can make patties and refrigerate it also..

Lemon Garlic Chicken

This is surely one of the best chicken recipes I’ve gone through and tried.. No full of spices.. Just basic one.. I’ve learned this recipe from a friend of mine and yes my son loved it.. Although he loves spicy food..

Ingredients

  1. Boneless chicken : 500 grams
  2. Garlic : 3 tbsp
  3. Lemon : 2
  4. Chilly flakes : 1 tbsp
  5. Chicken stock : 1-2 cubes
  6. French beans
  7. Black pepper : 1 tsp
  8. Olive oil

Method

  1. Marinade the chicken with salt, garlic, lemon, chilly flakes and olive oil. ( 4-5 hours)
  2. You can marinade the beans also with the same.
  3. Grill the chicken pieces just to give them charr effect.. I grilled it on the stove directly.
  4. Now to the pan add water(less) n chicken stock and black pepper When it is dissolved then add the chicken and the beans.
  5. Cook it for good 15 minutes..
  6. Serve it with lemon slices n pita bread..

Lasagna

This homemade lasagna is surely one for the recipe binder. It is a very popular and cheesy dish of Italy. My lasagna is loaded with 2 layer of pasta followed by minced meat n tomato puree.. Finally layer of gooey Mozzarella cheese and parmesan.

It is a recipe that is mix of cheesy, hearty and all flavors.

Method

  1. Boil the lasagna sheets. If you don’t have one, you can surely go for big pastas( this time I did that). Do not overcook the sheets.

  2. To the pan add oil and minced beef. Now add ginger garlic paste, salt, chilly powder and tomato puree. Keep cooking at medium heat.Turn off the flame when done.

  3. Now to the baking pan drizzle some olive oil.. Layer lasagna sheet( remember to pat dry the sheets before placing it) and add the minced beef.. Now add little ketchup. Then Mozzarella and parmesan cheese.

  4. Repeat the same process and finally adding of Mozzarella. With sprinkle of Oregano And chilly flakes.

  5. Bake for 20 minutes. Covering it with aluminum foil to Prevent drying

Mutton raan

Mutton raan is one of the must have delicacies during the season of Eid ul adha.. It makes up a complete dish in itself. This was my first try, as my husband always wanted to give full Mutton raan cooking a try.. So yes we did it.. But trust me, u need lots of patience and time for this.I Marinated the raan for 48 hours and it took good 2 hours to get ready. So if you want to have it, take out time and cook.. But yes, em sure everyone would love it.Preparation time : 2 days for marinationCooking time : 2-3 hoursIngredients

  1. Mutton raan- 1 full
  2. Tomato puree : 2 tins
  3. Onion paste : 1 cup
  4. Curd : 1/2 cup
  5. Raw papaya paste : 3 tbsp
  6. Chilly powder : 2 tbsp
  7. Dhaniya powder : 2 tbsp
  8. Ginger garlic paste : 2 tbsp
  9. Garam masala: 1 tbsp
  10. Zeera powder : 2 tbsp
  11. Salt
  12. Green chilly paste : 2tbsp

Method

  1. Make deep cuts on the raan and then marinade it with all the above masalas. Make sure the masalas are into the cuts also.
  2. Keep it for good 48 hours.
  3. Now to a big bottomed pan add water and the marinated raan. Cook on medium flame for almost an hour.
  4. Now transfer it to the oven grill and grill it for an hour or till the Mutton becomes tender.
  5. When done, drizzle some oil on it and serve with onion rings, coriander chutney and lemon.

Rajma

This is one of the most popular comfort foods of North India, specially Punjab.But now it has become the comfort food of many home.

During my college days in Delhi, we use to gorge on the street rajma chawal anytime. It was soo delicious and filling. Here I am sharing with you guys the simplest and the tastiest form of rajma.. You can serve this curry with rice or paratha.

Preparation time : 8-10 hours

Cooking time : 40 minutes

Ingredients

  1. Rajma : 2 cups boiled
  2. Bay leaves( tez patta) : 1
  3. Cinnamon ( dal cheeni) : 1
  4. Onions : 2( blended into paste) and 1 chopped
  5. Tomato puree : 1 cup
  6. Ginger garlic paste : 2tbsp
  7. Cloves ( long) : 2
  8. Chilly powder : 2tbsp
  9. Coriander powder : 1 tbsp
  10. Garam masala : 2 tbsp
  11. Zeera : 2 tbsp
  12. Salt
  13. Zeera powder : 2tbsp

Method

  1. In a large bowl soak the rajma for atleast 8 hours or overnight.

  2. Now in the pressure cooker add the rajma with fresh water. Add bay leaves, cinnamon, cloves and salt.

  3. Cook it nicely. It can be checked by pressing the rajma with your fingers, it should get mashed easily.

  4. Once it is cooked. Keep it aside

  5. Heat oil in a pan. Add chopped onions. Saute it properly. Now add tomato puree, ginger garlic paste, salt, coriander powder, chilly powder, Zeera powder. Saute for good 2-3 minutes. When the oil starts oozing out, it means it’s done.

  6. Now add the rajma to it with the stock . Cook for some time, till the boils come.

  7. The curry will thicken at this stage. You can press some beans with the spatula and add water according to your consistency.

  8. Cook for 2-3 minutes.

Garnish with coriander, onion rings and serve hot with rice..

Poha cutlets

Learning is an ongoing process.. You learn new things every day.. I have learned this recipe from food rush on Instagram. I loved it so much, that I could not stop myself from trying it the other day.It’s a simple appetizer made from poha and boiled potatoes.

Preparation time : 10 minutes

Cooking time : 10 minutes

Ingredients

  1. Poha : 2 cups
  2. Potatoes : 1 boiled and mashed
  3. Chilly flakes : 2tbsp
  4. Salt
  5. Zeera powder : 1tbsp
  6. Chaat masala : 1 tbsp
  7. All purpose flour : 1/2 cup
  8. Vermacilli : handful

Method

  1. Wash the poha and drain the excess water. Keep it aside.

  2. To it add the mashed potatoes, Zeera powder, chilly flakes, salt. Mix it properly.

  3. Now give the mixture shape of any patties you want and refrigerate for atleast an hour.

  4. Now take the flour add water and mix it. To it add chaat masala.

  5. Crush the vermacilli

  6. Now heat the oil in a pan. Take the patties and dip it in flour and cover it with vermacilli. Then fry

  7. Make sure that the flame is not to high as it will burn the vermacilli.

  8. When done, serve hot with coriander chutney..

Deviled eggs

These eggs will surely be a hit in your party. Super easy to make and amazingly delicious. There are many ways to make and serve these eggs. But the old and traditional way is this.

Preparation time : 10 minutes

Ingredients

  1. Eggs : 5 boiled
  2. Mayonnaise : 1/2 cup
  3. Mustard sauce : 2 tbsp
  4. Chilly flakes : 1 tbsp
  5. Oregano : 1 tbsp
  6. Salt
  7. Black pepper : 1 tsp

Method

  1. Take the boiled eggs and cut into half. Transfer the egg yolks in a bowl and the white part separately.
  2. Now mix the mayonnaise, Mustard sauce, salt, chilly flakes, pepper with the yolks. Mix it properly and shift the mixture to a piping bag.
  3. Fill the mixture in egg whites and garnish it with Oregano.
