Cheesy chicken balls

This recipe is actually my creation. Last night I was pretty confused what to make for dinner. I had chicken breast in my fridge.. Wanted to. Make. Something different. So I came up with these yummy cheesy balls. Of you have Cheddar cheese and mozerella.. You can do anything!!

Preparation time : 10 minutes

Cooking time : 10 minutes

Ingredients

  1. Chicken : 500 grams boneless
  2. Cheddar cheese : 1/2 cup
  3. Mozrella : 1 cup
  4. Spring onions : 1 cup
  5. Chilly powder : 2 tbsp
  6. Zeera powder : 2 tbsp
  7. Ginger garlic paste : 1 tbsp
  8. Salt
  9. Cornflour : 1 tsp
  10. Rice flour : 3 tbsp
  11. Eggs : 2 large beaten
  12. Ketchup : 1/2 cup
  13. Chilly sauce : 3 tbsp

Method

  1. Take the chicken breast and minced it. Make keema.

  2. To the chicken add all the dry ingredients and spring onions. Add rice flour, corn flour and beaten eggs.

  3. Mix well. Make small balls.while making the ball, insert a little Cheddar cheese in it. Make sure no loopholes are left in the ball.

  4. De fry them.

  5. Now in a pan add ketchup and chilly sauce. Add some water and cook for 10 minutes.

  6. Now to the fried balls add this ketchup sauce and shred some Mozrella.

Serve hot

Mutton chaap

Mutton chaap or chops… I hope everyone out there must had a superb Eid.. For me Eid is incomplete without these Mutton chaap, they are best eaten With coriander chutney. These chops are simple and the spices added to it are handful only.

Cooking time : 30 minutes

Ingredients

  1. Mutton chops : 500 grams
  2. Ginger garlic paste. : 2 tbsp
  3. Coriander powder : 2 tbsp
  4. Chilly powder: 2 tbsp
  5. Salt
  6. Zeera powder : 1tbsp
  7. Curd : 1cup
  8. Onion : 1large..sliced

Method

  1. Marinade the chops with curd, coriander powder, chilly powder, salt, ginger garlic paste and Zeera powder. Keep for atleast 2-3 hours.
  2. Now in a pressure cooker add little oil. Add sliced onions, when caramelized, transfer the chops to pressure cooker and add some water. Pressure cook on medium heat for 2 whistles.
  3. When the chops are done, cook them until the oil separates.

Serve hot with coriander chutney

Galauwti kababs

The word “Galauwti” means, literally to melt in mouth. This is another exotic kababs from the cuisine of Lucknow..

The story behind these kababs is, they were specifically created for the aging Nawab Wajid Ali Shah of Lucknow as his teeth were week enough to have meat. But he liked meat so much, so his cook created these kababs, which can melt in his mouth without an effort.And his love for meat continued.

Preparation time :20 minutes

Cooking time : 10 minutes

Ingredients

  1. Mutton minced: 500 grams
  2. Raw papaya paste : 2 tbsp
  3. Ginger garlic paste : 2 tbsp
  4. Chilly powder : 2 tbsp
  5. Garam masala : 2 tbsp
  6. Dhaniya powder : 1 tbsp
  7. Onions paste : 3 tbsp
  8. Zeera powder : 1 tbsp
  9. Salt as required
  10. Chilly paste : 1 tbsp
  11. Lemon

Method

  1. Marinate the Mutton with all ingredients. Garam masala, ginger garlic paste, chilly paste, onion paste and all dry ones.

  2. Mix and knead well to form a dough. Cover it with cling wrap and refrigerate it for 3 hours max.

  3. After refrigerating it. Shape the meat mixture into round patties or whatever shape you desireto make.

  4. Heat oil in a pan and de fry the kababs.

  5. When done. Serve got with lemon Wedges nd green coriander chutbey

Chicken Dum Biryani

For our family weekend is always about having chicken. This time it was Chicken Dum Biryani.This form of biryani is little different than the others.

Dum Style cooking involves cooking rice and meat in layers in deep bottomed heavy pan. This style of cooking is called giving DUM.. as both rice and meat is cooked in its own steam.

Preparation time : 30 minutes

Cooking time : 1 hour approx

Ingredients

  1. Chicken : 1kg
  2. Onions : 3 large( sliced)
  3. Curd : 250grams
  4. Ginger garlic paste : 2 tbsp
  5. Chilly powder : 2 tbsp
  6. Basmati rice : 5 cups
  7. Garam masala : 1tbsp
  8. Food color
  9. Cinnamon : 1 stick
  10. Star anise : 3-4
  11. Bay leaves : 2
  12. Kewra : 1 tsp
  13. Mint leaves : 1/2 cup
  14. Salt as per taste

Method

  1. Firstly marinate the chicken with curd, ginger garlic paste, chilly powder and salt. For best results keep it overnight, if you don’t have time then atleast for half and hour.

  2. Now take water in a vessel. To if add salt and star anise, cinnamon stick and bay leaves. When the water strrts boiling add rice. Cook rice.. Half.

  3. For this biryani your pan should be bottomed. In oil add onions, saute it nicely. Now add the marinated chicken. Cook until its half done.

  4. Now finally make layers of rice and chicken. The bottom should be rice then chicken ( atleast 2 layers). In between sprinkle some mint leaves. Add the food color

  5. Now seal the pan with dough. So that the biryani can be cooked in Dum for atleast 15 minutes at low flame.

    Serve hot with chili chill raitaa
    Note : mix food color in milk and add little Kewra water.

Chocolate chips cookies

This recipe of chocolate chips cookies is soo tempting and fun to make. I am a big fan of cookies and my shopping trolley always has this packet of cookies. Because for me baking them was like a Big Big task. The first time I baked simple chocolate cookies and they turned out to be a hit…

So this time I finally made up my mind to bake my favorite cookies πŸ’žπŸ’ž

There are many small things to keep in mind before baking them

Preparation time : 10 minutes

Baking time : 10-12 minutes

Ingredients

  1. Salted butter : 1 cup( I used almarai butter. Make sure your butter is at room temperature. Not too hard not too melted)
  2. All purpose flour : 3 cups
  3. Sugar : 1 cup
  4. Baking soda : 1tsp
  5. Baking powder : 1/2 tsp
  6. Eggs : 2 large
  7. Chocolate chips : 2 cups ( I used Hershey chocolate chips, and good amount)

Method

  1. Combine all the dry ingredients in a bowl. Flour, baking soda, baking salt. Whisk properly

  2. Now mix together sugar, butter and eggs. You should get a fluffy and light yellow color. It will take time.

  3. Now add all the dry ingredients and keep whisking.

  4. Now add chocolate chips to it and mix well the dough.

  5. Keep the dough in an air tight container and refrigerate for atleast 2 hours

  6. Once the dough is completely chiiled take it out. Make small balls and place them on baking sheet.

  7. Pre heat the oven and bake the cookies for 12 minutes or till the time to see light brown color.

  8. Remove the cookies and let them cool…

Ready to eat.. Just bring onnnn your glass of cold milk and grab your cookies

Grilled chicken

This chicken is usually made when I think it’s time to cut on calories and loose some.. 😊😊😊It is such a light form of chicken that one can eat. I usually cook this for dinners along with salad and rice for my kids.

It’s a must try dish and my fam fav❀️❀️

Preparation time : 10 minutes

Cooking time : 30 minutes

Ingredients

  1. Chicken : 1 full preferably with skin
  2. Ginger garlic paste : 2 tbsp
  3. Chilly powder : 1 tbsp
  4. Apple cider vinegar : 2 tbsp
  5. Salt
  6. Olive oil for dressing
  7. Chaat masala : 1 tbsp

Method

  1. Marinate the chicken with ginger and garlic paste, chilly powder, salt, vinegar and little oil. For 6-7 hours
  2. Refrigerate the zip lock bag of chicken.
  3. Pre heat the oven and place the chicken pieces on the tray.. Covered with aluminum foil before.
  4. Set the temperature and grill the chicken.
  5. Chicken does not take much time, so keep on checking.
  • Serve with your favorite dip

    Rice kheer or Rice pudding

    It is a famous North Indian dessert made up of rice and milk mainly. This recipe I have learned it from my mother and it taste amazing. We usually use to cook it on Eid or any occasions and in large quantity.

    Cooking time : 40 minutes

    Ingredients

    1. Rice : 1/2 cup soaked for atleast 4-5hours
    2. Milk : 1 litre full cream
    3. Evaporated milk : 2 tins
    4. Sugar : as per your likeness
    5. Nuts : handful of cashews, almonds, pistachios, raisins
    6. Cardamom powder : 1/2 tsp

    Method

    1. Soak the rice and blanch the almonds
    2. Now to the heavy wide pan add milk. Keep the flame at low to medium heat and keep stirring the milk so that it does not stick at the bottom.
    3. Cook for 20 minutes and it comes to boil
    4. Now grind the soaked rice and mix it in the milk. Keep stirring
    5. Cook till the rice is almost done.
    6. Now add sugar and all nuts
    7. Keep on cooking until the rice thickens. Now add cardamom and switch off the flame.
    8. Cover it up
    9. After some time refrigerate it. Serve chilled.

    Indian Aloo tikki

    This is a very famous Street food coming straight from Delhi.. During my school days, I use to just gorge on the street food like anything. And this Aloo Tikki takes me back to that sweet days.

    This crispy Aloo Tikki is just another easy recipe made with boiled and mashed potatoes and seasoned with some basic Indian spices.

    It is a perfect homemade recipe where you can add your own spices as well.

    Preparation time : 20 minutes

    Cooking time :15 minutes

    Ingredients

    1. Potatoes :3 large( boiled and mashed)
    2. Chilly powder : 1 tbsp
    3. Dhaniya powder( coriander) : 1tbsp
    4. Zeera powder : 1/2 tbsp
    5. Chaat masala : 1tsp
    6. Salt
    7. Rice powder :4 tbsp

    Method

    1. Mash the boiled poataoes and add all the ingredients.
    2. Make tikki out of it and refrigerate for an hour
    3. After that heat oil in a pan. When the oil is hot add tikki one by one and fry them at medium heat.
    4. Flip on another side and get crispy brown color.
    5. Once done.. Serve with your favorite chutney

    Coconut laduu

    There is a short story behind these laddoo’s.. When I got married and came to my sasural, then one day my Inlaw made these laddoo’s. I never had this sweet tooth so did not even looked at them. But noticed that, as soon as she served, it got finished in seconds. Everyone was so fond of them.

    For me Indian sweets were always difficult to make and requires a lot of effort and Desi Ghee. But this laddoo is deprived of all.

    No efforts no Ghee.. Just few ingredients and it is ready

    Preparation time : 10Minutes

    Method

    1. To a bowl add desiccated coconut, heavy cream and sugar.
    2. Mix well and make ladoos
    3. Refrigerate for 30 minutes

    Ready to eat. Garnish it with leftover coconut flakes and raisins.

    Broasted chicken

    This form of chicken is loved by my boys and me as well.. A lottt. When I came to a Saudi, I had this broast at Al-Bake and became a fan of it. KFC too serves it but Al-Bake is just to yumm. So this time I tried copying them and Bingo!! It was a hit

    It takes time and preparation in advance, but it’s worth drooling for.

    Preparation time : 7-8 hours

    Cooking time: 20 minutes

    Ingredients

    1. Chicken : 2 whole
    2. Buttermilk : 2 cups or laban
    3. Chilly powder :2 tbsp
    4. Ginger garlic paste : 2 tbsp
    5. Eggs : 2 large whisked
    6. All purpose flour : 1 cup
    7. Bread crumbs : 1 cup
    8. Chaat masala : 1 tbsp
    9. Salt
    10. Hot sauce as per the taste

    Method

    1. Firstly marinade the chicken in buttermilk and hot sauce for the maximum time. I did overnight. (you can use Laban also). The buttermilk keeps the chicken juicy while it’s is fried
    2. Then to it add chilly powder, salt and ginger garlic paste. Add all this before an hour of frying.
    3. Now in a bowl take flour and add a little chaat masala to it. In another eggs followed by bread crumbs.
    4. Take the pieces one by one and start dipping. First in eggs then flour and then crumbs and then again flour. Now fry it.
    5. Make sure you fry similar parts together as wings and legs take less time to get cooked.

    Note : my bread crumbs were ready made and it too had some spices.
